Recipe: colourful homegrown slaw
Ingredients
1/2 red cabbage
2 carrots
1 red onion
1 apple
4 tbsp mayonnaise
2 tbsp olive oil
Juice of 1 lemon
Handful of raisins
Salt and pepper
Method
Using a food processor, or cutting by hand, finely slice the red cabbage. Place inside a large bowl.
Peel and dice the red onion and add to the bowl.
Peel the carrots and apple, then grate both into the bowl.
Add the remaining ingredients: olive oil, mayo, lemon juice and the raisins and stir well until all of the vegetables are coated and the raisins are spread evenly throughout.
This is such a simple slaw recipe, a family favourite that my Mum has been making for years, and which we’ve stolen from her and love to eat as a side dish the minute the weather warms up!
It’s colourful, tasty, and light on the mayonnaise, so is always fresh and zesty.
It’s one of our favourite side dishes to have at barbecues; it tastes great with burgers and sausages, as well as alongside grilled halloumi. Add in some homemade chips as well, for the perfect meal…
It’s especially good if you make it with homegrown fruit and veg. You can adjust the recipe with whatever you have on hand — grated beetroot is a great addition, kohlrabi adds some extra crunch, and you could even add in grated broccoli stems. Experiment and see what works well!
